A latte is one shot of espresso and about six ounces of steamed milk, finished with a thin layer of microfoam. That ratio is the whole drink. Get it right and the coffee tastes sweet and rounded rather than sharp, because the milk sugars soften the espresso instead of burying it.

The short answer: a latte in five steps
- Pull a double shot of espresso, about 36g in a warmed glass or mug.
- Pour cold milk into a jug, filled to just below the spout.
- Steam to 60C (140F), keeping the steam tip just under the surface for the first few seconds to draw in air.
- Swirl and tap the jug until the milk looks like wet paint with no visible bubbles.
- Pour from height, then drop in close to bring the foam through at the end.
The latte ratio, and why it matters
A latte sits between a flat white and a caffe latte in most cafes, and the only thing separating those drinks is how much milk goes in and how much foam sits on top. Work by volume and it is roughly one part espresso to three parts milk.

If your latte tastes thin, you almost certainly have too much milk rather than weak coffee. Drop to a smaller glass before you change anything about the shot.
How to steam milk so it actually pours
Steaming is two jobs in sequence, and people usually run them together and end up with stiff bubbles. First you add air, then you heat and roll.
Adding air (the first four seconds)
Sit the steam tip just below the milk surface so you hear a steady hissing, like paper tearing quietly. That is air being drawn in. Four seconds is plenty for a latte. Any longer and you are making cappuccino foam.
Rolling (the rest)
Drop the jug slightly so the tip is fully submerged and off centre. The milk should spin like a whirlpool. Keep going until the jug is uncomfortably warm to hold, which lands you around 60C. Past 65C the milk loses sweetness and starts to smell cooked.
- Whole milk is easiest. The fat gives you a forgiving, glossy foam.
- Oat milk is the best plant option. Look for a barista version, which has added protein or stabiliser so it does not split.
- Start cold. Cold milk buys you more time to fix the texture before it overheats.
- Never re-steam. Milk that has already been heated will not form microfoam again.

Three ways to make a latte without an espresso machine
You need strong, concentrated coffee rather than espresso specifically. These all work, in descending order of how close they get. See everything we have on espresso drinks.
Moka pot
The closest match. A moka pot brews at around two bars of pressure, so you get a thick, syrupy coffee that holds up against milk. Use it at the same 36g dose you would pull as a double.
AeroPress, brewed short
Use your normal dose but only 60ml of water and a fine grind. You get a concentrate that is bright rather than syrupy, which suits lighter roasts.
Very strong French press or pour over
Double the coffee and halve the water against your usual ratio. It will not have crema, and the texture is thinner, but the drink is still good. Our coffee to water ratio guide has the numbers for each method.
For the milk in any of these, warm it in a saucepan to 60C and use a handheld frother or a jar with a tight lid: half fill, shake hard for thirty seconds, then microwave uncovered for twenty seconds to set the foam.
Iced lattes are a different ratio
Cold milk does not soften espresso the way steamed milk does, so an iced latte needs a stronger base or it tastes watery once the ice melts. Which milk behaves best, and which will fight you
Milk choice changes the technique more than any other variable. What you are steaming is protein and fat: protein builds the bubble walls, fat keeps them stable and gives the drink body. Anything low in both is hard work.

If a plant milk splits, it is usually heat rather than the espresso. Pull it off five degrees earlier, around 55C, and pour immediately.
What you actually need, at three budgets
Nothing extra
A saucepan and a jar with a lid. Heat the milk, half fill the jar, shake for thirty seconds, microwave uncovered for twenty. You get real foam, coarser than microfoam but perfectly drinkable.
Around the price of a few coffees out

A machine with a steam wand
Now you can build genuine microfoam and the ceiling rises a long way. Add a thermometer until you can judge 60C by touch, which takes about a week of daily practice. Machine options are in our espresso machine guide.
Flavoured lattes, without ruining the balance
Syrup goes in the cup first, before the espresso, so the shot dissolves it on the way through. Added last it sits at the bottom and the first half of the drink tastes of nothing. One 10ml pump is plenty for a 240ml latte; two makes it a dessert.
